Air-cooled machines blow kitchen heat back into the kitchen. In a 35°C ambient, they lose capacity — often 10-15% — and run longer to compensate.

Water-cooled machines reject heat into a water line. They hold rated capacity in hot kitchens, but they consume water continuously and need a decent drain.

Our rule of thumb: water-cooled for kitchens over 30°C ambient and high peak demand; air-cooled for cooler, well-ventilated locations. Write ambient temperature into the spec — most capacity tables assume 21°C, not 35°C.

Ask for the capacity curve, not the headline number. A supplier who quotes a single kg/Tag figure without an ambient note is quoting you marketing.
